🇧🇬 Bob Chorba (Bulgarian Bean Soup)

Ingredients

  • 1 cup dried white beans (Great Northern or navy)

  • 6 cups water (+ extra for soaking)

  • 2 medium carrots, chopped

  • 1–2 red bell peppers, chopped

  • 2 medium tomatoes, grated or puréed (or 1 cup crushed tomatoes)

  • 2 medium onions, finely chopped

  • 1 small chili pepper, finely chopped (optional)

  • 4–5 sprigs fresh mint, chopped (or 1½ tsp dried mint)

  • 2 Tbsp olive or vegetable oil

  • 1 tsp paprika

  • Salt and black pepper to taste

Instructions

  1. Soak beans overnight in cold water.

  2. Drain, add 6 cups fresh water, and bring to a boil. Simmer gently for about 1 hour, until tender.

  3. In a large pot, heat oil and sauté onions and carrots for 5–10 minutes.

  4. Add chili and bell peppers; cook 1 minute.

  5. Add cooked beans with their liquid.

  6. Stir in tomatoes, mint, paprika, salt, and pepper.

  7. Simmer 10 minutes to blend flavors.

  8. Serve warm with bread.

Lord Jesus, as this soup warms our home, we pray that Your presence will warm the hearts of the children who will receive a bowl through Mission Possible this winter. Let every meal be touched by Your grace, every bowl be filled with Your provision, and every child know the comfort, peace, and unfailing love that comes from You. Amen.
